I've been gathering mushrooms for years. I was told many years ago to cut each mushroom "to leave spores" so they can come back. My brother, a rookie at this, says his people tell him to "pull them out". I think I'm right, maybe for the wrong reason... Do you know? There are some nice, dry chanterelles out there. BTW I read in The Omnivore's dilemma something that I was embarrassed not to know. The "chef" who prepares chanterelles in his story sautes them in a dry pan to get moisture out, then adds butter at the end. What a difference!
